Best Discovery This Season: Cookie Butter

Yeah, you read that right. The best discovery this holiday season, thanks to my brother, is Speculoos Cookie Butter from Trader Joe’s.

This spread has the texture and look of peanut butter, but the taste of a cinnamon snickerdoodle cookie. The label describes the “butter” as reminiscent of gingerbread and made of crushed cookies. It also suggests you smear this on pancakes or waffles. How great does that sound? I’ve been eating mine with Ritz Crackers. Something about the salty cracker and the sweet spread just works.

And if you’re wondering what Speculoos is, it is a shortcrust biscuit baked for consumption on St. Nicholas’ feast in the Netherlands on December 5th.

This is a seasonal item at Trader Joe’s, so stock up now before it’s off the shelf!

First it was fro-yo, then it was cupcakes, now it’s macaroons! Bakeries have been baking up French macaroons to keep up with the changing fads. This famous, fu-fu bakery has 3 locations Yountville, Las Vegas and New York. It’s definitely become a destination amongst tourists in either of these cities.

The soft chewy sandwich cookies come in a variety of flavors ranging from classic vanilla to green tea to chocolate mint. K went to Vegas on a trip with the boys recently and brought home a box of macaroons as a souvenir.

The food:

The box contained 6 different flavors of macaroons: strawberry, chocolate mint, lemon, vanilla, coffee and chocolate. All were delicious, especially the chocolate mint and coffee. French macaroons are completely different than the classic coconut macaroon. These French macaroons are made of almond paste and meringue, creating a soft, chewy consistency. The cookies are sandwiched together using either a cream or butter. We actually nursed the macaroons for about 4 days and they were still delicious. Can’t wait to go to NY to pick up some more!

My brother has become quite the baker. His latest obsession is Anthony’s Cookies n’ Cream cookies, cookies made from crushed Oreos. He and my sister-in-law loved them so much, they tried to recreate the cookie at home. After a day of experimenting, my brother created a cookie almost EXACTLY like Anthony’s, just less greasy.
