Dads Kitchen Meatloaf

Here’s a much needed post for the Dad’s Kitchen segment.

Meatloaf has a bad rap mostly because of its name. It sounds like mystery meat, old-fashioned. I grew up on my dad’s meatloaf which he makes from his own recipe. Meatloaf is something we look forward to at our house. The best thing about it is the leftovers. Meatloaf sandwiches with ketchup and American cheese? Yum!

Ingredients

1/2 lb ground beef
1 lb ground turkey
2 cups oatmeal
1 tsp salt
1 tsp pepper
1 tsp granulated onion
1/2 tsp granulated garlic
1 tsp dry parsley
1 egg
1/4 cup milk
1 tbsp A1 sauce
1 tbsp ketchup
1 tbsp parmesean
2 cups water
6 tbsp brown gravy mix

Cooking

Meatloaf – This recipe is very simple. Pre-heat oven to 350°F. In a mixing bowl, combine beef, turkey, oatmeal, salt, pepper, granulated onion, granulated garlic, dry parsley, egg, milk , A1 sauce and ketchup.  Place the mixture in a large glass pyrex dish and mold into a loaf-like shape. Sprinkle grated parmesean, ketchup and A1 sauce on top of the loaf to create a nice crust after baking. Pop the meatloaf in the oven and let it cook for an hour 1 hour to 1 hour and 15 minutes. If you’re using only ground beef, you can take the meatloaf out sooner.

Gravy – In a saucepan, heat up the water and brown gravy mix and whisk well until all lumps have dissolved. Before serving, pour the gravy on top and eat!

    I finally tried your dad’s meatloaf recipe, not bad! I like the texture that the oatmeal does for it-I never tried that as I always added bread crumbs and leftover rice to help bind it altogether. BUT, he might want to try adding a half pound of ground lamb to it, perhaps 1/2 lb ground beef, 1/2 lb ground turkey, and 1/2 lb of ground lamb. Yumm! I think the lamb really gives a meatloaf a very tasty and subtle flavor that is needed.
